What's Omakase
(Japanese: お任せ, Hepburn: o-makase)
The word “Omakase” means ‘I’ll leave it up to you’, signifying that the guests have complete confidence in the chef to serve up his selection of artfully crafted dishes for the meal, which is seasonal, artistic, elegant with the finest ingredients available.
Contrary to what many think of Omakase as several centuries’ old tradition, it’s astonishing that it was only popularized in the 1990s! As many new guests did not actually know much about fishes, this is where they leave it to the chef to decide the meal and spared the embarrassment of not knowing a particular fish name. To save ‘face’, ‘Omakase’ was born.
